Ingredients:
- 8lb Fresh Jackfruit; *Yields 2-4 Cups of fruit
- 1 Pack of Hamburger Buns
- 1 Tbsp Extra Virgin Olive Oil
- 1 Medium sized Onion
- 1/2 Cup of water
- 1/2 Cup of BBQ Sauce of your choice
Directions:
- Cut Jackfruit in half, then in quarters (If sticky, coat your knife with coconut oil)
- Pull the pieces of yellow flesh apart, throwing away the seeds and white stringy pieces and collecting all the yellow “meat” in a bowl
- Chop onions and place in a large non-stick skillet over medium heat with olive oil until translucent
- Add Jackfruit and cook until it begins to soften (8-10 minutes)
- Add water (Or a lager beer can be used) until it is evaporated
- Add BBQ sauce, turn down heat, cook until bubbly and jackfruit begins to fall apart, resembling pulled pork
- Season to taste with salt and pepper, then serve on slider!
- Garnish with toppings like, pickles, onions, cilantro
