Spaghetti Squash

Healthy substitute to pasta- low in fat and calories!

Prep time: 10 minutes

Cook time: 30 minutes

Total time: 40 minutes

Serving: 2-3

Ingredients:

  • 1 Spaghetti Squash, halved and seeded
  • 2 Tablespoons olive oil (1tbsp on each half)
  • Pinch of salt and pepper
  • Can of Pasta sauce (optional)
  • Parmesan Cheese (optional)

 

Directions:

  1. Preheat oven to 375 degrees
  2. Cut the squash in half lengthwise from stem to tail
  3. Scrape out the seeds
  4. Coat the inside of the squash with olive oil
  5. Place the squash, cut-side down on a baking sheet
  6. Bake the squash for about 30 minutes
  7. Let squash cool for about 5-10 minutes
  8. Scrape the flesh with a fork to create long strands
  9. Flavor with pasta sauce, pinch of salt and pepper, and sprinkle of parmesan cheese if desired

*For easier slicing, microwave the squash for 3-4 minutes.
